I AM SO SORRY!

oooohhhh guys! I have been busy… The blog has been quiet for the last week because I have started summer school. I study mathematics for 4 weeks, the second week just finished, and it is tough. I have to do it because I want to study international business and politics, and to do that I have to upgrade my math level.

Being healthy for me now is tough, but even though I am struggling, I am still fighting through it. School from 8am-3pm, training from 4-6pm, homework from 6-7pm, and dinner after. When that is done I am tired as hell, and I collapse in my bed. It is hard for me to find time to make a healthy breakfast, lunch, and dinner, but after I started this change in food choices and upgrading my exercising, I have felt fresh and awake, I feel like I have more energy. And because of that, do I feel like I have to keep going, I can’t imagine having less energy than I do now.

Wednesday after school, I took the train to Holbรฆk where Maria lives. We had a great day, and after dinner we ran 1.5miles to the gym, had a basketball session for 1.5 hours and ran home, my legs burning all the way home in the train. And today Maria is back in Copenhagen (AWESOME) yesterday we walked to the airport from my home around 5 miles, we picked up my best friend Nanna, and because the Metro and busses didn’t go last night, we walked back. This morning when we went grocery shopping we could feel it. ๐Ÿ˜€

We are cooking dinner for my parents today, we are thinking of tacos… yummy! I still have a recipe I want put up, are you interested? ๐Ÿ™‚

On Being Healthy

When I was younger I was sure that the only way you could be healthy was if you were skinny, but as I grew up, I realized that you can’t put it that way. For me it is hard to define ‘healthyness’. You can be skinny and still be really unhealthy, and you can be ‘big’ and be healthy.

When I was in High School I wrote an assignment on being healthy, we had to do tests like BMI, fat %, WH-ratio, VO2 max, and some other tests, I remember that I was surprised of the results, the people I thought were healthy, wasn’t really healthy, or at least according to the tests. The thing is when you take tests like these you always have to think about the sources of error that can relate to these tests.But when I wrote the assignment I opened my eyes on a topic that I wasn’t that interested in before.

I’ve tried so many times to lose weight, I have been on a 100 different diets, but nothing never really helped me. The difference now is that I am building a whole new lifestyle, I plan my food a week ahead, and I do healthy lunch packs for work, and I put fruits and vegetables around the house, so I see it everywhere I go it reminds me that I have to eat some of it.

I LOVE COOKING! I am obsessed with cooking, I really like creating food from scratch, which makes it easier to live healthier, or at least that is my impression. btw there will be a recipe post tonight ๐Ÿ™‚

My biggest motivation right now with this new lifestyle is that I feel much better also inside. I have more energy and it is easier for me to make the right choices when it comes to food. It is not difficult for me anymore to eat an apple and not chocolate because I don’t have any chocolate at home anymore. ๐Ÿ™‚

Crab-tortillas Yummy!

 

The Ingredients for the recipe:
1 Can of chopped tomatoes
1 Red chili pepper
200g of Crab meat
4 Whole wheat Tortillas
200g Cheddar cheese
100g Fresh buffalo Mozzarella
and some olive oil for frying.

Start by turning on the oven on 200ยบ (Celsius)

The tomato sauce is made of the chopped tomatoes, I only had the cans with Oregano and Basil but that doesn’t really matter. Chop the chili and mix it with the chopped tomatoes, then put paprika, garlic, thyme, and other spices that fits you. I didn’t have any fresh garlic, so I used garlic powder, but I recommend it with fresh garlic.

Fry your tortilla for a very short moment with around a teaspoon oil per tortillas.

When it starts to ‘bubble’ like this, turn them.

Then it should look like this. When you think your tortilla is done you put it on a plate with a napkin underneath, it absorbs the oil.

then you put your crab meat, mozzarella, tomato sauce, and cheddar on top.

And roll.

If you have any tomato sauce left pour it over the tortillas with the rest of the cheddar cheese. Put them in the oven for 10-12 minutes depending on how much you filled the tortillas up.

EAT!!!!!!!!! YUMMY!!!!!!!!!! ๐Ÿ˜€ ๐Ÿ˜€ ย It is really good with a plain green salad on the side.

Sun

I switched my work schedule so I could enjoy a day in the sun with my mum, I can not remember the last time we had a mum and daughter day, so I am looking forward to it. Right now we are at the pool with some very cold water and a good book each ๐Ÿ™‚ love these days!!!! I promise a recipe later tonight.ย

This is my second meal of the day, fruit salad (cherries, bananas, strawberries, apples, pears, and raspberries) with Greek yoghourt (2%) with a squeeze of honey and lemon. ๐Ÿ™‚ delicious!!!!

The bike

In Denmark we are known for our bicycles, everyone rides a bicycle, and 1 in 3 ride it to work, and more than half the population in Copenhagen ride it to work. We love our bicycles, and most of the times is it actually easier to ride you bicycle than to take a bus or a train. If you ask Danes why they take their bike a small part of them would say: ‘to safe the environment’ – ‘because it is cheap’ – ‘because it is healthy’ but all of us bicyclists would agree that it is the easiest. In Denmark we have special bicycle paths so we are not in contact with the cars, busses, or other vehicles, I think that it is amazing, so you do not have to worry all the time. In London I have not been using my bicycle that often, mostly in the park or just to do grocery shopping. I started using my bicycle when I got home, and it is crazy how it is easier just to have your bicycle, and I ride it almost everywhere! ๐Ÿ˜€ I ride it at least 15miles a day, that includes to and from work, and then other small errands.

The other day I was with a friend at a cafe just chillin’, playing cards, and drinking tea. On the way home I rode my bicycle and she took the bus, and at my house I had to wait for her at the bus stop. Funny how a bicycle is faster than a bus ๐Ÿ™‚ Copenhagenization is the future of traveling around your city, hopefully. ๐Ÿ™‚

MARIA <3

OK OK! I told you guys that Maria was coming yesterday, I really missed her a lot, we haven’t seen eachother since end of August, so it was such a relief to see her, and after a while it seemed like we hadn’t been away at all, it was amazing.. props to Maria! anyway for dinner we had chicken wok very basic but very delicious. Than we met up with some of our good friends and went to a part of Copenhagen called Christinia which is like a seperate state in Denmark, where they have their own laws and stuff, very interesting. We were both suppose not to drink alcohol for 8 weeks, but yesterday we had some beers and some wine, which weren’t good for any of us. So from now own I have decided not to drink at all.. that was the purpose from the beginning, but after yesterday I decided that it is a waste of time and money, you get so God damn tired, and it is not worth it. I woke up about an hour ago, and I am so not ready for work in an hour. So my plan of food today is that I skip the first two meals, it is not healthy at all, but I woke up late, and I drank alcohol yesterday, so I have to cut down on some other caleroies. I have been taking my bike to and from work since we started this, so today is no difference, but I might go for a run tonight anyway!

I was at a birthday the other night with three of my absolute best friends! N had made an outstanding spongecake, or at least that is what I heard! Because once again I pulled myself together and had some melon instead which was very good as well! And when I came home and hadn’t eaten any cake or muffin I felt so proud of myself ๐Ÿ™‚ the morning after when I went on the scale I was once again reminded that I did the right thing, because I have already lost 6pounds! Absolutely love it, and I feel so light! Now I just have to keep it up!!!!

Today my best good friend Maria, who is the better half on this blog, is staying for the weekend, I haven’t seen her since August, so I am really looking forward to see her!

First Challenge

Yesterday evening, first day of the project. I was excited, I am sure Maria was as well. I had my first challenge yesterday, the beautiful girl in the picture graduated, and I was invited to her party afterwards, her parents had made all this wonderful food, and it was horrible when I could not eat any of it. At the same time most of my friends were drinking alcohol, but I stayed strong, and stuck to one plate of food, and only the salad, chicken, and whole grain pasta. But it was actually easier than I thought. I might not get all the good-looking food, but in a couple of weeks I will be good-looking ๐Ÿ˜‰

Motivation!

You are our motivation.

We want you to be a part of our project and help us and others to change our lifestyle. This project is not only about losing weight and getting in shape. This is also about personal development. We believe your personal experience and believes can help us open our eyes and see things from another point of view.ย  When we get old, we want to have that moment right before we die, where we look back at our lives, take a deep breath and with no regret in our voice say, โ€œwuuuuooohhhhhh WHAT A TRIP. CAN I DO THIS AGAIN?โ€

We want to take you to the โ€˜goodโ€™ side. We want you to think about your actions when you do it, why you do it, how you do it, and the outcome of it.

The plan for this project is to start eating healthier, do more exercising, and of course straighten up our lifestyle. We will be training 5 times a week; we will mix up trainings with our normal basketball training, running, swimming, and other kinds of fitness. A part from that, we will also be doing a powerwalk or something else every morning before breakfast. We have had a bit of help with our food, a nutritionist has giving us something to start up on. And now we would like to have some help from you guys, feel free to share good and healthy recipes or other great advise. And we will share thoughts and comments from our ups and downs.

Today is the day !

Rikke and I have been talking and we are both very excited about this day.

Rikke started her day biking and I am going to run 3 miles in a little bit. ๐Ÿ™‚ For breakfast I will eat oats with milk.

MONDAY!

Today is the day we start our project. I have been out on a long bike ride to the beach this morning before breakfast, and I do not feel exhausted I feel awake, and I think that this Monday is going to be a great day! For breakfast I had porridge oats with milk and an apple. I rolled on my ankle yesterday, so I took the bike instead of a power walk, but it felt great! Maria has written something about motivation, this will be posted later today.
